  • 1/2 cup honey
  • 45 cloves garlic, minced
  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 1 tablespoon rice vinegar
  • 1 teaspoon fresh ginger, grated
  • 1/4 teaspoon red pepper flakes
  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water
  • 1 teaspoon sesame oil
  • 2 green onions, chopped (for garnish)
  • Salt and pepper to taste

Instructions

  1. Pat chicken thighs dry with paper towels and place them in the bottom of a 4-to-6-quart slow cooker in a single layer.
  2. In a medium bowl, whisk together honey, minced garlic, soy sauce, rice vinegar, grated ginger, and red pepper flakes until smooth.
  3. Pour the sauce over the chicken, ensuring pieces are coated. Cover and cook on low for 6-7 hours or high for 3-4 hours until chicken is tender.
  4. Remove chicken from the slow cooker and place on a serving platter.
  5. Turn slow cooker to high. Whisk cornstarch slurry (cornstarch and cold water) and pour into the hot sauce in the crockpot.
  6. Stir well and cook uncovered for 15-20 minutes until the sauce thickens and becomes glossy.
  7. Drizzle thickened sauce over the chicken, add sesame oil, and garnish with chopped green onions.
  8. Serve immediately with rice or noodles.

Notes

For crispy skin, broil chicken for a few minutes after removing from slow cooker. Ensure cornstarch is mixed with cold water to prevent clumping. Adjust sweetness or spice to taste. Leftovers keep well in the fridge for up to 4 days or can be frozen for 3 months.
