A simple and flavorful slow-cooked salsa verde chicken taco recipe perfect for busy weeknight dinners. Tender chicken infused with tangy salsa verde, ready to shred and serve in warm tortillas.

  • 2 pounds boneless, skinless chicken breasts
  • 1 ½ cups salsa verde (store-bought or homemade)
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1 teaspoon ground cumin
  • ½ teaspoon chili powder (optional)
  • Salt and pepper to taste
  • Juice of 1 lime
  • A handful of fresh cilantro, chopped
  • 1012 small corn or flour tortillas
  • Optional toppings: diced avocado, shredded cheese, sour cream, sliced radishes, pickled jalapeños

Instructions

  1. Finely chop 1 medium onion and mince 3 garlic cloves. Gather salsa verde and spices.
  2. Place 2 pounds of chicken breasts at the bottom of the crockpot. Sprinkle with 1 teaspoon ground cumin, ½ teaspoon chili powder (if using), salt, and pepper.
  3. Scatter chopped onion and minced garlic over the chicken. Pour 1 ½ cups salsa verde evenly on top, coating the chicken.
  4. Cover and cook on low for 6-7 hours or on high for 3-4 hours until chicken is tender and shreds easily.
  5. Shred the chicken directly in the crockpot using two forks or tongs. Stir to combine with the salsa verde juices.
  6. Cook uncovered on low for another 10-15 minutes to thicken the filling.
  7. Squeeze fresh lime juice over the chicken and sprinkle chopped cilantro. Stir gently.
  8. Warm tortillas in a dry skillet over medium heat for about 30 seconds per side or microwave wrapped in a damp paper towel for 20 seconds.
  9. Assemble tacos by spooning salsa verde chicken onto warm tortillas and adding optional toppings as desired.

Notes

Use chicken thighs as a juicier alternative but adjust cooking time accordingly. For a dairy-free version, skip cheese and sour cream or substitute with avocado and fresh salsa. If chicken is dry after shredding, stir in a splash of chicken broth or reserved cooking liquid. Warm tortillas just before serving to keep them pliable.
