These no-bake protein balls combine rich dark chocolate, nutty almonds, and protein powder for a quick, chewy, and satisfying snack perfect for on-the-go energy.

  • 1 cup old-fashioned rolled oats (gluten-free if needed)
  • ½ cup dark chocolate chips (60% cocoa or higher)
  • ⅓ cup honey (or maple syrup for vegan option)
  • 1 teaspoon vanilla extract
  • ½ cup vanilla or chocolate protein powder (plant-based recommended)
  • Pinch of sea salt (optional)

Instructions

  1. Optional: Grind 1 cup of old-fashioned rolled oats in a food processor for about 20 seconds until fine, for a smoother texture.
  2. In a mixing bowl, combine 1 cup almond butter, ⅓ cup honey, and 1 teaspoon vanilla extract. Stir until creamy and well blended. If too stiff, microwave for 10 seconds to soften.
  3. Add the ground oats, ½ cup protein powder, and ½ cup dark chocolate chips to the wet mixture. Mix thoroughly until evenly distributed and sticky but manageable. Add a teaspoon of water or more almond butter if dry.
  4. Using hands or a tablespoon, scoop and roll the mixture into 1-inch balls, making about 15-18 balls. Wet hands slightly to prevent sticking.
  5. Place the balls on a baking sheet or plate lined with parchment paper and refrigerate for at least 30 minutes to firm up.
  6. Serve chilled or at room temperature. Store leftovers in an airtight container in the fridge for up to one week or freeze for up to three months.

Notes

If the balls are too soft after chilling, freeze for 10 minutes before serving to help them hold their shape. Use creamy almond butter for best binding. Grinding oats finely helps with texture but can be skipped for chunkier bites. Wet hands before rolling to prevent sticking.
