These breakfast casserole muffins are fluffy, golden, and freezer-friendly. Perfect for busy mornings, they combine eggs, cheese, sausage, and vegetables in individual portions that reheat in minutes.

  • 1/2 cup whole milk
  • 1/4 cup heavy cream
  • 1 cup shredded cheddar cheese (sharp preferred)
  • 1/2 cup cooked breakfast sausage, crumbled
  • 1/2 cup diced bell pepper (any color)
  • 1/4 cup diced onion (yellow or sweet)
  • 1/4 cup chopped spinach (fresh, or frozen thawed and squeezed dry)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika (smoked preferred)
  • Non-stick cooking spray or butter for greasing

Instructions

  1. Preheat oven to 375°F (190°C). Generously grease a 12-cup standard muffin tin with non-stick spray or butter.
  2. Heat a skillet over medium heat. Cook diced onion and bell pepper for 3-4 minutes until softened. If using raw sausage, add and cook until browned. If using pre-cooked meat, add after vegetables are soft. Add spinach in the last minute and cook until wilted. Remove from heat and let cool slightly.
  3. In a large mixing bowl, whisk together eggs, milk, heavy cream, salt, pepper, garlic powder, and paprika until uniform and slightly frothy (about 30 seconds).
  4. Add the cooled vegetable-meat mixture and 3/4 cup of the shredded cheese to the eggs. Stir gently to combine.
  5. Divide the egg mixture evenly among the 12 muffin cups, filling each about 3/4 full. Sprinkle remaining 1/4 cup cheese on top.
  6. Bake for 18-22 minutes, until edges are golden brown and centers are set (toothpick inserted in center comes out clean).
  7. Cool in the pan for 5 minutes, then run a knife around edges to loosen. Transfer muffins to a cooling rack. Cool completely before freezing.

Notes

Pre-cook vegetables to avoid watery muffins. Let ingredients come to room temperature for fluffier texture. Grease muffin tin well to prevent sticking. Do not overbake; check at 18 minutes. Cool completely before freezing. Muffins can be stored in the refrigerator for up to 4 days or frozen for up to 3 months.
