Easy Ground Turkey Pumpkin Chili Kids Will Love

This creamy, mildly sweet chili is made with ground turkey and pumpkin puree, creating a kid-friendly meal that even picky eaters will love. It comes together in 40 minutes and is perfect for busy weeknights.

  • 1 pound (450g) ground turkey (93/7 lean)
  • 1 can (15 oz or 425g) pumpkin puree (not pumpkin pie filling)
  • 1 can (14.5 oz or 411g) diced tomatoes (fire-roasted preferred)
  • 1 can (15 oz or 425g) kidney beans, drained and rinsed
  • 1 medium yellow onion, diced (about 1 cup or 150g)
  • 3 cloves garlic, minced
  • 1 cup (240ml) low-sodium chicken broth
  • 2 tablespoons (16g) mild chili powder
  • 1 teaspoon (2g) ground cumin
  • 1 teaspoon (2g) paprika (smoked or sweet)
  • 1 teaspoon (5g) salt
  • ½ teaspoon (1g) black pepper
  • 1 tablespoon (15ml) olive oil
  • Optional toppings: shredded cheddar cheese, sour cream or Greek yogurt, chopped cilantro, crushed tortilla chips

Instructions

  1. Heat the oil: Place a large pot or Dutch oven over medium-high heat. Add 1 tablespoon of olive oil and let it heat for about 30 seconds until shimmering.
  2. Cook the onion: Add the diced onion and cook for 4-5 minutes, stirring occasionally, until translucent and softened.
  3. Add the garlic: Stir in the minced garlic and cook for 30 seconds until fragrant.
  4. Brown the turkey: Add the ground turkey and break it up with a wooden spoon. Cook for 6-8 minutes until no longer pink.
  5. Add the spices: Sprinkle chili powder, cumin, paprika, salt, and black pepper over the turkey. Stir and cook for 1 minute to toast the spices.
  6. Add the pumpkin and tomatoes: Pour in the pumpkin puree and diced tomatoes (with juices). Stir until well combined.
  7. Add the broth and beans: Pour in the chicken broth and add the drained kidney beans. Stir everything together.
  8. Bring to a simmer: Turn heat to high and bring to a gentle boil. Reduce heat to low, cover, and simmer for 20 minutes, stirring occasionally.
  9. Taste and adjust: Uncover and taste. Add more salt or chili powder if desired.
  10. Serve: Ladle into bowls and let everyone add their own toppings.

Notes

For a thicker chili, simmer uncovered for an extra 10-15 minutes. For a spicier version, add a pinch of cayenne or chipotle powder. Leftovers taste even better the next day. If using 99% lean turkey, add a splash of olive oil when browning.
