Easy No-Bake Peanut Butter Energy Bites

Quick and simple no-bake peanut butter energy bites made with wholesome pantry staples, perfect for a healthy snack anytime.

  • 1 Β½ cups (135g) old-fashioned rolled oats
  • Β½ cup (130g) natural creamy peanut butter
  • β…“ cup (113g) honey
  • 2 tablespoons (14g) ground flaxseed
  • 1 tablespoon (12g) chia seeds
  • 1 teaspoon vanilla extract
  • ΒΌ cup (43g) mini chocolate chips (optional)
  • Pinch of salt

Instructions

  1. Combine 1 Β½ cups rolled oats, 2 tablespoons ground flaxseed, 1 tablespoon chia seeds, and a pinch of salt in a mixing bowl. Stir until evenly mixed.
  2. Add Β½ cup natural peanut butter, β…“ cup honey, and 1 teaspoon vanilla extract to the dry ingredients. Mix until well combined and sticky. Add more honey or peanut butter if too dry.
  3. Fold in ΒΌ cup mini chocolate chips if using.
  4. Using damp hands or a small cookie scoop, roll about 1 tablespoon of mixture into tight balls and place on a baking sheet lined with parchment paper.
  5. Refrigerate the formed bites for at least 30 minutes to set.
  6. Enjoy chilled or at room temperature. Store leftovers in an airtight container in the fridge for up to one week or freeze for up to three months.
