Quick and easy no-bake granola bites made with peanut butter, oats, and honey, perfect for healthy snacking on the go.

  • 1 Β½ cups old-fashioned rolled oats (135g)
  • Β½ cup natural peanut butter (130g), creamy and unsweetened preferred
  • ΒΌ cup honey (85g), or maple syrup for vegan option
  • 2 tablespoons ground flaxseed (14g)
  • 1 teaspoon vanilla extract
  • ΒΌ teaspoon salt
  • ΒΌ cup mini chocolate chips (optional, 45g), use dairy-free if needed

Instructions

  1. Gather your ingredients: oats, peanut butter, honey, ground flaxseed, vanilla extract, salt, and optional chocolate chips.
  2. In a mixing bowl, combine peanut butter, honey, and vanilla extract. Stir until smooth and well blended, about 2-3 minutes. Warm peanut butter slightly if thick.
  3. Add oats, ground flaxseed, and salt. Mix thoroughly until oats are coated and mixture sticks together but is not overly wet, about 3-4 minutes.
  4. Fold in optional chocolate chips or dried fruit gently to avoid melting or breaking down.
  5. Use a tablespoon or small cookie scoop to portion out the mixture. Roll each portion between palms to form 1-inch diameter bite-sized balls. Wet hands if mixture sticks.
  6. Place bites on a parchment-lined tray and refrigerate for at least 30 minutes to set. Alternatively, freeze for 15 minutes if in a hurry.
  7. Serve chilled or at room temperature. Store leftovers in an airtight container in the fridge.

Notes

Warm peanut butter slightly if thick to mix smoothly. Chill bites for at least 30 minutes to set properly. Use wet hands to shape bites if mixture sticks. Store airtight in fridge up to 1 week or freeze up to 2 months. Adjust honey or oats if mixture is too dry or sticky.
