Instructions

  1. Prepare the chicken: shred or dice 1 to 1½ cups cooked chicken breast into bite-sized pieces.
  2. Make the dressing: In a mixing bowl, combine 3 tablespoons BBQ sauce, 2 tablespoons mayonnaise, and 1 tablespoon lime juice. Whisk until smooth and adjust to taste.
  3. Mix the chicken with dressing: Add the shredded chicken to the bowl and toss gently until coated.
  4. Prepare the veggies: halve cherry tomatoes, dice red bell pepper, slice red onion thinly if using, and drain corn kernels if canned or thaw frozen corn.
  5. Combine salad greens and vegetables: Add 4 cups mixed salad greens to the bowl, then toss in the prepared tomatoes, bell pepper, onion, and corn.
  6. Add cheese: Sprinkle ½ cup shredded cheddar cheese over the salad.
