Easy One-Pan Smothered Pork Chops with Caramelized Onion Gravy

A quick and comforting one-pan meal featuring juicy bone-in pork chops smothered in rich, slow-cooked caramelized onion gravy. Perfect for busy weeknights and cozy dinners.

  • 4 bone-in pork chops, about 1-inch thick
  • Salt and pepper, to season
  • 2 tablespoons olive oil or vegetable oil
  • 2 large yellow onions, thinly sliced
  • 3 cloves garlic, minced
  • 2 tablespoons all-purpose flour (or gluten-free flour)
  • 2 cups chicken broth
  • 2 tablespoons butter
  • 1 teaspoon fresh thyme, chopped (optional)
  • 1 teaspoon Worcestershire sauce

Instructions

  1. Pat the pork chops dry with paper towels and season both sides generously with salt and pepper. (About 5 minutes)
  2. Heat 1 tablespoon of oil in a large cast iron skillet over medium-low heat. Add the sliced onions and a pinch of salt. Stir occasionally and cook slowly until onions are deep golden brown and caramelized, about 20-25 minutes.
  3. Push the onions to the side or transfer to a bowl temporarily. Increase heat to medium-high and add the remaining tablespoon of oil. Place pork chops in the pan and sear for 3-4 minutes per side until nicely browned. (Total 8 minutes)
  4. Reduce heat to medium. Add minced garlic to the pan and cook for 30 seconds until fragrant. Sprinkle flour over onions and garlic, stirring constantly for 1-2 minutes to cook out raw flour taste.
  5. Slowly pour in chicken broth while stirring to avoid lumps. Add butter, Worcestershire sauce, and thyme. Stir gently until butter melts and mixture thickens slightly, about 3-4 minutes.
  6. Nestle browned pork chops back into the pan, spoon some gravy and onions over them. Cover loosely with lid or foil and reduce heat to low. Simmer for 10-12 minutes until pork chops reach internal temperature of 145°F (63°C), spooning gravy over chops occasionally.
  7. Remove chops from pan and let rest for 5 minutes to redistribute juices. Serve smothered with caramelized onion gravy.

Do not rush caramelizing onions; cook low and slow to avoid bitterness. Use a meat thermometer to ensure pork chops reach 145°F for safe and juicy results. If gravy thickens too much, add broth or water to loosen. Rest pork chops after cooking for best juiciness.
