A comforting, one-pot soup that captures the flavors of lasagna without the hassle of layering. It features ground beef, broken noodles, and creamy ricotta swirls for a quick and satisfying weeknight meal.

  • 1 pound (450g) ground beef
  • 1 tablespoon olive oil (optional, if using lean beef)
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 can (28 oz / 794g) crushed tomatoes
  • 4 cups (950ml) beef or vegetable broth (low-sodium)
  • 8 ounces (225g) lasagna noodles, broken into pieces
  • 1 tablespoon Italian seasoning
  • 2 cups fresh or frozen spinach
  • 1 cup (240g) whole milk ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste

Instructions

  1. Heat a large pot over medium-high heat. Add olive oil if needed, then add ground beef. Cook until no pink remains, breaking it up with a wooden spoon. Drain excess fat if necessary, but leave some for flavor. Season lightly with salt and pepper.
  2. Reduce heat to medium. Add diced onion and cook until translucent (3-4 minutes). Add minced garlic and cook for 30 seconds until fragrant.
  3. Stir in tomato paste and cook for 1 minute. Pour in crushed tomatoes and broth, scraping the bottom of the pot to release browned bits. Stir in Italian seasoning.
  4. Break lasagna noodles into 2-inch pieces and add to the pot. Stir to ensure noodles are submerged. Bring to a boil, then reduce heat to low. Cover partially and simmer for 12-15 minutes until noodles are tender.
  5. Stir in fresh spinach and cook until wilted (about 2 minutes).
  6. Remove the pot from heat. Drop spoonfuls of ricotta cheese into the hot soup and gently swirl them in to create creamy pockets. Do not stir completely smooth.
  7. Ladle into bowls, top with grated Parmesan cheese, and serve immediately.

Notes

Remove the pot from heat before adding ricotta to prevent curdling. If meal prepping, consider undercooking noodles slightly or storing them separately. Leftovers can be reheated with a splash of broth as noodles absorb liquid. Ricotta texture may change slightly if frozen; add fresh ricotta upon reheating for best results.
