  • About 20 thin pepperoni slices (Hormel preferred, turkey pepperoni as leaner option)
  • 6 oz (170 g) sharp cheddar cheese, sliced or cubed
  • 1 sleeve (about 30) sturdy square crackers like Triscuit or Wheat Thins
  • Optional: 6 mini pickles or baby dill pickles
  • Optional: grapes or apple slices
  • Optional: small container of mustard or ranch dip

Instructions

  1. Take pepperoni slices out of the fridge to come to room temperature.
  2. Slice cheddar into Β½-inch (1.3 cm) cubes or thin slices.
  3. Wash and slice optional fruit or pickles as needed.
  4. Lay out about 10 crackers in a neat stack or spread across the lunchbox section.
  5. Place cheddar slices or cubes in their own section or a small silicone cup.
  6. Fold or stack pepperoni slices in their compartment; include dip if desired.
  7. Add optional mini pickles or fresh fruit in separate compartments or cups.
  8. Close lunchbox securely and refrigerate until ready to serve (best within 4-6 hours).

Notes

Keep cheese cool until packing to maintain texture. Use thinner pepperoni slices to reduce greasiness. Choose sturdy crackers to avoid crumbling. Prep in batches to save time. Pack dips in leak-proof containers. Wrap cheese in parchment if prepping the night before. Best eaten within 4-6 hours refrigerated.
