  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy — about 2-3 minutes with an electric mixer. Scrape down the sides of the bowl once during mixing.
  3. Beat in the pumpkin puree, egg, and vanilla extract until well combined. The mixture will look a little curdled — that’s normal.
  4. In a separate bowl, whisk the flour, baking soda, baking powder, salt, cinnamon, and pumpkin pie spice together.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed or folding with a spatula. Mix just until no streaks of flour remain. The dough will be soft and slightly sticky.
  6. Gently fold in the chocolate chips with a spatula. Save a handful to press onto the tops of the cookies before baking for a bakery-style look.
  7. Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart. Fit about 9 cookies per sheet.
  8. Bake for 10-12 minutes, until the edges look set and lightly golden but the centers still look slightly soft and underdone.
  9. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack.
