  • 1 can (12 oz) evaporated milk
  • 1 box (15.25 oz) yellow cake mix
  • 1 cup (2 sticks) unsalted butter, melted
  • 1 teaspoon pumpkin pie spice (optional)
  • 1/2 teaspoon cinnamon (optional)
  • Pinch of nutmeg (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish with butter or nonstick spray.
  2. In a large mixing bowl, whisk together the pumpkin puree and evaporated milk until smooth. If using, whisk in pumpkin pie spice, cinnamon, or nutmeg.
  3. Pour the pumpkin mixture into the prepared baking dish and spread evenly with a spatula.
  4. Sprinkle the dry yellow cake mix evenly over the pumpkin layer. Do not stir.
  5. Drizzle the melted butter evenly over the cake mix layer, covering as much as possible.
  6. Bake for 45-50 minutes, until the top is golden brown and the filling is bubbly around the edges. If browning too quickly, tent with foil for the last 10 minutes.
  7. Let cool for at least 15-20 minutes before serving. Serve warm.

Notes

For a crunchier top, dot cold butter cubes over the cake mix instead of using melted butter. Letting the cake rest overnight in the fridge improves flavor. Use a serrated knife for clean slices.
