  • 3 tablespoons unsalted butter
  • 2 tablespoons pure maple syrup
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • 1 teaspoon fresh thyme or sage leaves (optional garnish)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or a silicone mat.
  2. Wash the delicata squash thoroughly, pat dry, trim off the stem and tip, slice in half lengthwise, and scoop out seeds. Place cut-side down and slice crosswise into ½-inch thick half-moons.
  3. In a small saucepan over medium heat, melt the butter. Continue cooking, swirling occasionally, until it foams and turns a deep amber color with a nutty aroma (about 3-4 minutes). Remove from heat immediately.
  4. Whisk the maple syrup, salt, and pepper into the warm brown butter. Taste and adjust seasoning if needed.
  5. Place the sliced squash in a large mixing bowl. Pour the maple brown butter mixture over the top and toss until every slice is evenly coated.
  6. Arrange the squash slices in a single layer on the prepared baking sheet, ensuring they are not overlapping.
  7. Roast for 15 minutes. Remove from the oven, flip each slice using tongs or a spatula, and return to the oven.
  8. Roast for another 10-15 minutes, until the squash is tender and deeply caramelized with golden-brown edges. Total roasting time is about 25-30 minutes.
  9. Remove from the oven and let cool on the pan for 2-3 minutes. If using, sprinkle fresh thyme or sage leaves over the top. Serve warm.

Notes

Don’t skip the pre-roast before adding the glaze to prevent burning. Watch the brown butter carefully as it can burn quickly. Space the squash slices in a single layer for best caramelization. Season generously with salt to balance the sweetness.
