A happy accident turned weekly staple: tender salmon and bright asparagus cooked in nutty browned butter with garlic and lemon, all in one pan in under 30 minutes.

Ingredients

Scale
  • 4 salmon fillets (about 6 ounces each)
  • 1 bunch asparagus (about 1 pound, trimmed)
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 large lemon (zest and juice)
  • 1 tablespoon olive oil
  • 1 teaspoon kosher salt, plus more for seasoning
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Let salmon sit at room temperature for 10 minutes.
  2. Rinse asparagus, snap off woody ends, and pat dry.
  3. Pat salmon fillets dry with paper towels. Season both sides generously with salt and pepper.
  4. Heat a large oven-safe skillet over medium-high heat. Add olive oil and 1 tablespoon butter until melted and foaming, about 1-2 minutes.
  5. Place salmon skin-side down in the hot skillet. Cook undisturbed for 3-4 minutes until skin is golden and crispy. Flip and cook for another 2 minutes.
  6. Reduce heat to medium. Add remaining 3 tablespoons butter, minced garlic, and lemon zest. Cook until fragrant, about 30 seconds, being careful not to burn the garlic.
  7. Arrange asparagus around the salmon. Squeeze juice of half the lemon over everything. Sprinkle with red pepper flakes if using. Toss asparagus gently in the butter mixture.
  8. Transfer skillet to the oven. Roast for 8-10 minutes until salmon is opaque and flakes easily (internal temperature of 125°F for medium-rare or 135°F for medium) and asparagus is tender but bright green.
  9. Remove from oven and let rest for 2-3 minutes. Squeeze remaining lemon half over the top and sprinkle with fresh parsley. Serve directly from the skillet.

Notes

Pat salmon dry for best crust. Let pan get hot before adding salmon. Don’t move salmon while searing. Watch garlic carefully to avoid burning. Use a thermometer for perfect doneness. For thin asparagus, add halfway through oven time.
