These Easy Turkey and Cheddar Lunchbox Pinwheel Roll-Ups are quick, no-cook, and perfect for lunchboxes or parties. Made with simple ingredients like tortillas, cream cheese, deli turkey, and cheddar, they come together in under 10 minutes and taste even better the next day.

  • 4 (10-inch) flour tortillas (burrito-sized)
  • 8 oz cream cheese, softened
  • 1/4 cup mayonnaise
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 810 slices deli turkey breast
  • 810 slices cheddar cheese
  • 1/4 cup shredded lettuce (optional)
  • Fresh spinach leaves (optional)

Instructions

  1. Make the cream cheese spread: In a small bowl, combine the softened cream cheese, mayonnaise, garlic powder, and black pepper. Mix until smooth and well combined. Taste and add a pinch of salt if needed. Set aside.
  2. Prepare your tortillas: Lay one flour tortilla flat on your cutting board. If cold from the fridge, let sit out for 5 minutes to come to room temperature for easier rolling.
  3. Spread the cream cheese mixture: Using a rubber spatula, spread a thin, even layer of the cream cheese mixture over the entire surface of the tortilla, leaving about a half-inch border around the edges.
  4. Layer the turkey: Place 2-3 slices of deli turkey on the tortilla, overlapping slightly to cover the entire surface evenly.
  5. Add the cheese: Lay 2-3 slices of cheddar cheese on top of the turkey, overlapping slightly. If using shredded lettuce or spinach, sprinkle on top now.
  6. Roll it up tight: Starting at one edge, roll the tortilla as tightly as possible without tearing, using your fingers to tuck in the filling as you go.
  7. Wrap and chill: Place the rolled tortilla seam-side down on a piece of plastic wrap. Wrap tightly, twisting the ends to secure. Place on a baking sheet or plate and repeat with remaining tortillas. Refrigerate for at least 30 minutes, or up to 4 hours.
  8. Slice into pinwheels: When ready to serve, unwrap each roll and place on a cutting board. Using a sharp serrated knife, slice into 1-inch thick rounds using a gentle sawing motion. You should get about 6-8 pinwheels per tortilla.
  9. Arrange and serve: Place pinwheels on a platter or in a lunchbox. If serving at a party, stick a toothpick through each one to keep them from unrolling.

Notes

Let cream cheese soften properly for easy spreading. Don’t skip the chilling step—it helps the pinwheels hold their shape when sliced. Use a serrated knife for clean cuts. These taste even better the next day as flavors meld. Store in an airtight container in the refrigerator for up to 3 days. Not recommended for freezing.
