This isn’t just another charcuterie board. It’s a full-on Oktoberfest experience that comes together in under 30 minutes, with simple ingredients and no complicated cooking.

  • 46 fresh bratwurst links
  • 1 tablespoon olive oil
  • 1 cup beer (light lager or Oktoberfest-style)
  • 1 medium yellow onion, sliced into thin rings (optional)
  • 46 large soft pretzels
  • 2 tablespoons melted butter
  • Coarse sea salt (for sprinkling)
  • 1/2 cup whole-grain mustard
  • 1/2 cup spicy brown mustard
  • 1 cup beer cheese dip
  • 1 cup pickled vegetables (cornichons, pickled onions, or giardiniera)
  • 1/2 cup sauerkraut, drained well (optional)
  • 1 apple, cored and thinly sliced
  • Fresh herbs for garnish (dill or parsley)

Instructions

  1. Brown the bratwurst (10 minutes). Heat the olive oil in a large skillet over medium-high heat. Add the bratwurst links and cook for 3-4 minutes per side, until golden brown all over. Work in batches if needed.
  2. Simmer the brats (15 minutes). Pour the beer into the skillet and add the sliced onion if using. Bring to a gentle simmer, then reduce heat to medium-low. Cover and cook for 12-15 minutes, turning once halfway. Cook until internal temperature reaches 160°F.
  3. Reheat the pretzels (5 minutes). While the brats simmer, preheat oven to 350°F. Place pretzels on a baking sheet and warm for 4-5 minutes. Brush with melted butter and sprinkle with coarse salt immediately after removing from oven.
  4. Prepare the accompaniments (5 minutes). Spoon mustards, beer cheese, pickled vegetables, and sauerkraut into separate small bowls. Slice apple thinly and toss with lemon juice to prevent browning. Arrange fresh herbs if using.
  5. Slice the bratwurst (2 minutes). Remove brats from skillet and let rest for 2 minutes. Slice each link diagonally into 1-inch pieces. Alternatively, leave whole for a more rustic look.
  6. Assemble the board (5 minutes). Place small bowls on the board first. Arrange sliced bratwurst near the center. Place pretzels around the edges, overlapping slightly. Fill empty spaces with apple slices and pickled vegetables. Garnish with fresh herbs. Serve immediately.

Notes

For best results, use the two-step method: sear first, then simmer. Don’t prick the bratwurst with a fork before cooking. Reheat pretzels in the oven, not the microwave. If assembling ahead, keep bratwurst and pretzels warm in a low oven (200°F) and add cold accompaniments just before serving.
