  • Β½ teaspoon black pepper
  • Wooden or metal skewers (if wooden, soak in water for 30 minutes before grilling)

Instructions

  1. Prepare the marinade: In a mixing bowl, whisk together chipotle powder, fresh lime juice, olive oil, minced garlic, honey, salt, and black pepper (about 5 minutes).
  2. Marinate the shrimp: Add peeled and deveined shrimp to the bowl, toss to coat evenly. Cover and refrigerate for 15-20 minutes. Do not marinate longer than 30 minutes to avoid rubbery texture.
  3. Prepare the skewers: If using wooden skewers, soak them in water for at least 30 minutes. Thread 4-5 shrimp onto each skewer, piercing through the thickest part (about 10 minutes).
  4. Preheat the grill to medium-high heat (around 400Β°F / 200Β°C). Lightly oil the grill grates to prevent sticking.
  5. Grill the shrimp skewers: Place skewers on the grill and cook for 2-3 minutes per side, flipping once, until shrimp are opaque and slightly charred (total grilling time about 6 minutes). Avoid overcooking.
  6. Finish and garnish: Remove skewers from grill, sprinkle chopped fresh cilantro over them, and let rest for 2 minutes before serving.

Pat shrimp dry before marinating for better flavor absorption. Do not marinate longer than 30 minutes to avoid rubbery shrimp. Soak wooden skewers for 30 minutes before grilling to prevent burning.
