  • 1/4 cup honey (85 grams)
  • 1/2 cup BBQ sauce (120 ml)
  • 2 tablespoons sriracha or hot sauce (30 ml)
  • 1 teaspoon garlic powder (3 grams)
  • 1 teaspoon smoked paprika (3 grams)
  • 1/2 teaspoon ground black pepper (1 gram)
  • 1 teaspoon salt (5 grams)
  • 2 tablespoons olive oil (30 ml)
  • 1 tablespoon lime juice (15 ml)
  • Optional garnish: chopped fresh cilantro or parsley

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the drumsticks dry with paper towels and place them in a large mixing bowl.
  3. Season the drumsticks with salt, pepper, garlic powder, and smoked paprika. Drizzle with olive oil and toss to coat evenly.
  4. In a small saucepan over low heat, combine honey, BBQ sauce, sriracha, and lime juice. Stir gently until warm and blended, about 3-4 minutes. Avoid boiling.
  5. Place the drumsticks on a wire rack set over a lined baking sheet. If no rack is available, place directly on foil and plan to flip halfway through cooking.
  6. Bake the drumsticks for 25 minutes at 400°F (200°C).
  7. Remove from oven and brush generously with the firecracker honey BBQ glaze. Return to oven and bake for another 10-15 minutes, basting once more halfway through.
  8. Check doneness with an instant-read thermometer; it should read 165°F (74°C) in the thickest part.
  9. Let the drumsticks rest for 5 minutes before serving.
  10. Optional: Garnish with chopped cilantro or parsley.

Notes

Pat chicken dry for crispy skin. Use a wire rack for even crispiness. Warm glaze gently without boiling. Baste twice to build flavor and avoid burning. Watch closely during last 10-15 minutes to prevent glaze from burning. Glaze can be thinned with water or lime juice if too thick. Leftovers keep well refrigerated for up to 3 days and reheat best in oven.
