Instructions

  1. In a large bowl, whisk together the flour, baking powder, baking soda, salt, and sugar until evenly combined.
  2. In a separate bowl, whisk the buttermilk, eggs, melted butter, and vanilla extract until smooth.
  3. Pour the wet ingredients into the dry ingredients and gently stir with a spatula just until combined. The batter should be lumpy but without dry flour patches. Do not overmix.
  4. Preheat a non-stick skillet or griddle over medium heat for about 5 minutes until hot enough that a drop of water sizzles and evaporates quickly.
  5. Lightly grease the skillet with butter or oil. Pour ΒΌ cup batter per pancake onto the skillet.
