  • 1 fresh English cucumber, thinly sliced lengthwise
  • 4 large flour tortillas or wraps (whole wheat or gluten-free options available)
  • Everything bagel seasoning, for sprinkling
  • 1 tbsp fresh dill, finely chopped (optional)
  • 1 tsp lemon zest (optional)
  • Salt and pepper, to taste

Instructions

  1. Rinse the cucumber and slice it lengthwise into thin strips about 1/8 inch thick. Remove large seeds if necessary.
  2. In a mixing bowl, stir the softened cream cheese until smooth. Mix in fresh dill, lemon zest, salt, and pepper if using.
  3. Lay one tortilla flat and spread an even 1/4 inch thick layer of cream cheese over the entire surface.
  4. Arrange cucumber strips evenly over the cream cheese, leaving a 1/2 inch border at the edge.
  5. Roll the tortilla tightly into a log, wrap in plastic wrap, and refrigerate for at least 10 minutes to firm up.
  6. Remove from fridge and slice into 1-inch thick pinwheels using a sharp knife.
  7. Sprinkle the outside of each pinwheel generously with everything bagel seasoning and arrange on a platter to serve.

Notes
