  • ½ cup (50 g) shredded carrots
  • ½ cup (50 g) thinly sliced cucumber, seeds removed
  • Optional: chopped fresh dill or chives
  • 1 cup (150 g) strawberries, hulled and halved
  • 1 cup (150 g) orange segments, peeled and sectioned
  • 1 cup (150 g) green grapes, seedless
  • ½ cup (75 g) blueberries
  • ½ cup (75 g) kiwi slices, peeled and cut into rounds
  • Wooden or bamboo skewers (6-inch length)

Instructions

  1. Prepare the Mini Turkey Pinwheels (15 minutes): Lay a flour tortilla flat on your work surface.
  2. Spread about 2 tablespoons (30 g) of softened cream cheese evenly over the tortilla, leaving a ½-inch border around the edges.
  3. Layer 3-4 slices of deli turkey evenly over the cream cheese.
  4. Distribute a handful of baby spinach leaves, shredded carrots, and cucumber slices over the turkey.
  5. Optionally sprinkle chopped dill or chives for added flavor.
  6. Starting at one edge, gently but firmly roll the tortilla into a tight log.
  7. Using a sharp knife, slice the roll into 1-inch (2.5 cm) pinwheels.
  8. Repeat with remaining tortillas and ingredients.
  9. Arrange the pinwheels in the bento box compartment.
  10. Assemble the Fruit Skewers (10 minutes): Wash and prep all fruit: hull strawberries, peel oranges and kiwi.
  11. Thread fruit pieces onto wooden skewers in rainbow order: strawberry, orange, green grape, kiwi, blueberry.
  12. Make 4-6 skewers depending on your container size.
  13. Place the fruit skewers in a separate compartment or wrap in plastic wrap to keep fresh.
  14. Pack and Store (5 minutes): Arrange pinwheels and fruit skewers neatly in your bento box or lunch container.
  15. Optionally, add a small container of hummus or yogurt-based dip for extra flavor.
  16. Seal the container tightly and refrigerate until ready to eat.
  17. Try to consume within 24 hours for best freshness.

Notes

Use room-temperature cream cheese for easier spreading. Don’t overfill pinwheels to prevent bursting. Roll tortillas tightly but gently. Prep fruit just before assembling to avoid sogginess. Store fruit skewers wrapped tightly to maintain freshness. Slice pinwheels with a serrated knife to avoid squashing. Pinwheels can be made a day ahead and stored wrapped in the fridge. For toddlers, cut fruit into smaller pieces and avoid skewers to prevent choking hazards. Freezing pinwheels is not recommended.
