  • 1 tablespoon toasted sesame seeds
  • 8 slices deli turkey breast (nitrate-free preferred)
  • 4 slices cheddar or Swiss cheese, cut in half
  • 2 tablespoons mayonnaise or plain Greek yogurt
  • Fresh baby spinach or lettuce leaves
  • Freshly ground black pepper, to taste
  • Handful of cherry tomatoes or baby carrots
  • Small container of hummus or ranch dip (optional)
  • Fresh fruit slices (apple, grapes, or berries)

Instructions

  1. Slice cucumbers into 2-inch pieces and place in a mixing bowl. Sprinkle with salt and let sit for 10 minutes to draw out excess water.
  2. Using a wooden spoon or pestle, gently smash the cucumber pieces until they crack and break into irregular chunks, about 2-3 minutes.
  3. In a small bowl, whisk together rice vinegar, sesame oil, sugar, and minced garlic. Pour over smashed cucumbers and toss gently to coat. Sprinkle with toasted sesame seeds and set aside.
  4. Lay out each turkey slice flat. Spread a thin layer of mayonnaise or Greek yogurt evenly. Place a half slice of cheese and a few baby spinach leaves at one end. Carefully roll the turkey around the filling tightly without tearing. Secure with a toothpick if needed.
  5. Arrange smashed cucumbers in one compartment of the bento box and turkey roll-ups in another. Add cherry tomatoes, carrots, or chosen veggies and fruit in remaining sections. Include a small container of hummus or dip if desired.
  6. Sprinkle black pepper on the roll-ups if desired. Close the box tightly and refrigerate until ready to eat.

Notes

Prepare smashed cucumber the night before and add sesame seeds just before serving to keep them crunchy. Keep turkey slices cold before rolling to prevent tearing. Use cream cheese as a glue alternative to mayo if roll-ups slip apart. Experiment with herbs like dill or mint for added flavor. Store leftovers in airtight container up to 24 hours; drain excess liquid from cucumbers before packing again.
