These Healthy Frankenstein Guacamole Cups are a fun, no-cook Halloween snack made with creamy avocado, black beans, and fresh veggies. They’re quick to assemble, naturally gluten-free and vegan, and perfect for parties or a healthy treat.

  • 3 ripe avocados
  • 1/2 cup canned black beans, drained and rinsed
  • 2 tablespoons fresh lime juice
  • 1/4 cup finely diced red onion
  • 1 small jalapeรฑo, seeded and minced
  • 1/4 cup chopped fresh cilantro
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/2 cup black olives, sliced
  • 1/4 cup cherry tomatoes, halved
  • Small carrot sticks (cut into tiny rectangles)
  • Fresh parsley or cilantro sprigs
  • Blue corn tortilla chips (for serving)

Instructions

  1. Prep your ingredients first: dice the red onion, mince the jalapeรฑo, chop the cilantro, slice the olives, and halve the cherry tomatoes.
  2. Drain and rinse the black beans. Pat them dry with a paper towel if desired.
  3. Cut the avocados in half, remove the pits, and scoop the flesh into a large mixing bowl. Mash with a fork until mostly smooth with a few small chunks.
  4. Add the rinsed black beans to the bowl and mash together until the beans are broken down but still visible (creating a marbled look).
  5. Mix in the lime juice, diced red onion, minced jalapeรฑo, chopped cilantro, salt, pepper, and garlic powder. Stir until well combined. Taste and adjust seasoning if needed.
  6. Line a 6-cup muffin tin with squares of plastic wrap (about 6 inches each), letting the edges hang over the sides.
  7. Using a cookie scoop or tablespoon, divide the guacamole evenly among the six lined muffin cups, filling each about three-quarters full. Press down firmly.
  8. Fold the overhanging plastic wrap over the top of the guacamole and press down firmly to compact it. Refrigerate for at least 15 minutes.
  9. After chilling, gently pull up on the plastic wrap to lift each guacamole cup out of the tin. Peel off the plastic wrap carefully.
  10. Place each guacamole head on a serving platter. Decorate with two olive slices for eyes, a curved olive slice for the mouth, two cherry tomato halves on the sides for neck bolts, and a small carrot rectangle below each tomato. Top with parsley or cilantro sprigs for hair.
  11. Serve immediately or chill until ready to serve. Best within an hour of decorating.

Notes

Chill time is crucial for the guacamole to hold its shape. If making ahead, keep undecorated cups covered in the fridge for up to 24 hours and add decorations just before serving. For a spicier version, add an extra jalapeรฑo or a pinch of cayenne. For a kid-friendly version, omit the jalapeรฑo and add finely diced bell pepper.
