  • ยผ cup chopped walnuts or pecans (optional)
  • 2 tablespoons pepitas (pumpkin seeds for topping, optional)

Instructions

  1. Preheat your oven to 375ยฐF (190ยฐC). Line your muffin tin with paper liners or lightly grease the cups.
  2. Whisk the dry ingredients together: In a medium bowl, combine the flour, baking soda, baking powder, pumpkin pie spice, and salt. Whisk until evenly distributed.
  3. Mix the wet ingredients: In a large bowl, whisk together the pumpkin puree, Greek yogurt, brown sugar, maple syrup, eggs, melted coconut oil (or butter), and vanilla extract until smooth and well combined.
  4. Combine wet and dry ingredients: Pour the dry ingredients into the wet ingredients. Use a rubber spatula to fold together gently until no streaks of flour remain. Do not overmix; a few lumps are fine.
  5. Fold in any add-ins: If using chocolate chips, nuts, or both, gently fold them in with about 5-6 folds.
  6. Fill the muffin cups: Divide the batter evenly among the 12 muffin cups, filling each about ยพ full. If adding pepitas, sprinkle on top now.
  7. Bake for 18-22 minutes, until a toothpick inserted into the center comes out clean or with a few moist crumbs, and the tops spring back when lightly pressed.
