A hearty, flavorful turkey chili with black beans that tastes like it’s been simmering all day but comes together in under an hour. This one-pot meal is perfect for meal prep and packed with protein and fiber.

  • 1 large yellow onion, diced (about 1.5 cups)
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 celery stalks, diced
  • 1.5 pounds lean ground turkey (93/7)
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (optional)
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 can (14.5 oz) fire-roasted diced tomatoes, undrained
  • 1 can (14.5 oz) crushed tomatoes
  • 2 cans (15 oz each) black beans, drained and rinsed
  • 2 cups low-sodium chicken broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon unsweetened cocoa powder
  • 1 bay leaf
  • 1 tablespoon brown sugar (optional)

Instructions

  1. Prep your veggies: dice the onion, bell peppers, and celery; mince the garlic; measure out spices into a small bowl.
  2. Heat olive oil in a Dutch oven or large pot over medium heat. Add onion, bell peppers, and celery. Cook for 5-7 minutes until soft and onion is translucent.
  3. Add minced garlic and stir for 30 seconds until fragrant.
  4. Add ground turkey, breaking it up with a spoon. Cook for 6-8 minutes until no longer pink and lightly browned.
  5. Add chili powder, cumin, smoked paprika, cayenne (if using), oregano, salt, and pepper. Stir and cook for 1 minute to bloom the spices.
  6. Pour in fire-roasted diced tomatoes (with juices), crushed tomatoes, and chicken broth. Stir, scraping up any browned bits from the bottom.
  7. Add black beans, Worcestershire sauce, cocoa powder, bay leaf, and brown sugar (if using). Stir well.
  8. Bring to a boil, then reduce heat to low. Cover and simmer for 25-30 minutes, stirring occasionally.
  9. Remove bay leaf. Taste and adjust seasoning with more salt, pepper, or cayenne as needed.
  10. Serve hot with desired toppings.

Notes

For best flavor, make a day ahead and refrigerate overnight. The chili thickens as it sits; add a splash of broth when reheating if needed. Don’t skip blooming the spices—it deepens the flavor. For a milder version, omit cayenne pepper.
