This copycat Starbucks pumpkin cream cold foam coffee is a quick and easy fall drink made with real pumpkin puree, heavy cream, and maple syrup. It’s smoother, more pumpkin-forward, and far more satisfying than the drive-thru version.

  • 1 cup strong brewed coffee, cooled
  • 1/2 cup milk (any kind; whole milk recommended)
  • 12 teaspoons vanilla syrup (store-bought or homemade)
  • Ice cubes, as needed
  • 1/4 cup heavy cream (cold)
  • 2 tablespoons pumpkin puree (100% pure, not pumpkin pie filling)
  • 1 tablespoon maple syrup (or brown sugar)
  • 1/2 teaspoon pumpkin pie spice (plus extra for garnish)
  • 1/4 teaspoon vanilla extract

Instructions

  1. Brew 1 cup of strong coffee using your preferred method. Let it cool to room temperature, about 5-10 minutes. If in a hurry, refrigerate for 2-3 minutes.
  2. In a small bowl, combine 2 tablespoons pumpkin puree, 1 tablespoon maple syrup, 1/2 teaspoon pumpkin pie spice, and 1/4 teaspoon vanilla extract. Whisk until smooth and no lumps remain.
  3. Pour 1/4 cup cold heavy cream into a jar with a tight-fitting lid. Add the pumpkin mixture. Screw the lid on tight and shake vigorously for 30-45 seconds until the foam is thick and pourable (like melted ice cream).
  4. Fill a tall glass with ice cubes. Pour in the cooled coffee, then add 1/2 cup milk and 1-2 teaspoons vanilla syrup. Stir gently.
  5. Slowly pour the pumpkin cream foam over the back of a spoon held just above the coffee surface to create layers.
  6. Sprinkle a pinch of pumpkin pie spice on top. Serve immediately with a straw.

Notes

Use cold heavy cream straight from the fridge for best foam. Don’t over-shake the foam (stop when it looks like thick pancake batter). Strain pumpkin puree if watery. Adjust sweetness to taste. The pumpkin cream base (without cream) can be made 2-3 days ahead.
