  • 3 tablespoons bourbon
  • 1/3 cup granulated sugar

  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 6 tablespoons unsalted butter, cold and cut into small cubes
  • 1/3 cup whole milk (can substitute almond or oat milk)
  • Vanilla bean ice cream, for serving

Instructions

  1. Preheat your oven to 375Β°F (190Β°C). Lightly grease a 9×13-inch baking dish with butter or non-stick spray.
  2. Peel and slice about 6 cups of ripe peaches. Toss the sliced peaches in a large bowl with 1/4 cup honey, 3 tablespoons bourbon, and 1/3 cup granulated sugar. Stir gently to coat all the fruit evenly and let sit while preparing the topping.
  3. In a medium bowl, whisk together 1 cup all-purpose flour, 1 1/2 teaspoons baking powder, and 1/4 teaspoon salt. Using a pastry cutter or two forks, cut 6 tablespoons of cold, cubed unsalted butter into the flour mixture until it resembles coarse crumbs with some pea-sized pieces.
  4. Slowly add 1/3 cup whole milk and stir just until combined; do not overmix.
  5. Pour the peach mixture into the prepared baking dish, spreading evenly. Dollop spoonfuls of the topping over the peaches, leaving some gaps for steam to escape.
  6. Bake on the middle rack for 35-40 minutes, or until the topping is golden brown and the peach filling is bubbly. Tent with foil if topping browns too fast.
  7. Let the cobbler rest for about 10 minutes to thicken the juices.
  8. Serve warm with a generous scoop of vanilla bean ice cream on top.

Notes

Use ripe peaches for best flavor. Keep butter cold before cutting into flour to ensure a flaky topping. If topping browns too quickly, tent with foil. For gluten-free, substitute flour with almond or oat flour. For vegan, replace butter with coconut oil and milk with non-dairy milk. Bourbon can be replaced with peach juice or apple cider for non-alcoholic version. Adding cinnamon or nutmeg enhances flavor.
