  • 1 tablespoon olive oil
  • 8 ounces cream cheese, softened
  • 1/2 cup cooked, shredded chicken
  • 1/3 cup buffalo hot sauce (e.g., Frank’s RedHot)
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup crumbled blue cheese (optional)
  • 2 tablespoons ranch or blue cheese dressing
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/4 cup shredded mozzarella or extra cheddar (for topping)
  • 1 tablespoon chopped fresh chives or parsley (optional, for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a rimmed baking sheet with parchment paper or foil.
  2. Prepare the mushroom caps: Gently twist off the stems from 20-24 mushrooms. Use a small spoon to scrape out any dark gills inside the caps. Brush each cap lightly with olive oil and place them on the baking sheet, cavity side up.
  3. Make the filling: In a medium bowl, combine 8 ounces softened cream cheese, 1/2 cup shredded chicken, 1/3 cup buffalo hot sauce, 1/2 cup shredded cheddar, 1/4 cup crumbled blue cheese (if using), 2 tablespoons ranch dressing, 1/4 teaspoon garlic powder, and a pinch of salt and pepper. Mix until well combined.
  4. Fill the mushrooms: Using a small spoon or butter knife, stuff each mushroom cap generously with the buffalo chicken mixture. Pile it up a little above the rim.
  5. Top with cheese: Sprinkle the remaining 1/4 cup of shredded mozzarella or cheddar evenly over the filled mushrooms.
  6. Bake: Place the baking sheet in the preheated oven and bake for 15-18 minutes, or until the mushrooms are tender and the cheese is bubbly and lightly golden. For a browner top, broil for the last 1-2 minutes.
  7. Rest and garnish: Let the mushrooms cool on the baking sheet for about 5 minutes. Sprinkle with chopped chives or parsley if desired, then transfer to a serving platter.

Notes

Don’t skip brushing the mushroom caps with oil to prevent dryness. Use room temperature cream cheese for easier mixing. Shred your own cheese for better melting. For a milder version, reduce hot sauce to 2 tablespoons and add extra ranch dressing. To make ahead, stuff mushrooms and refrigerate unbaked for up to 4 hours; add 2-3 minutes to baking time.
