Instructions

  1. Pop the popcorn. If using stovetop method, heat 2 tablespoons of coconut or vegetable oil in a large pot over medium-high heat. Add 3 popcorn kernels and wait for them to pop. Once they do, add the remaining 1/3 cup kernels, cover, and shake the pot occasionally. When the popping slows to 2-3 seconds between pops, remove from heat.   3. Make the caramel. In a medium saucepan over medium heat, combine the 1/2 cup butter, 1 cup brown sugar, 1/2 cup corn syrup, and 1/2 teaspoon fine sea salt.   5. Coat the popcorn. Immediately pour the hot caramel over the popcorn on the baking sheet. Use your wooden spoon or spatula to gently fold and toss until every kernel is coated. Work quickly but carefully—the caramel sets fast.
  6. Shape the balls. Let the caramel-coated popcorn cool for exactly 2-3 minutes—long enough that it won’t burn your hands, but still warm and pliable. Lightly grease your hands with butter or cooking spray. Take a handful of the mixture (about 1/2 cup) and gently press it into a ball shape. Don’t squeeze too hard or you’ll crush the popcorn—just enough to hold it together. Place each ball on a fresh piece of wax paper. You should get about 12 medium-sized balls.
  7. Decorate immediately. While the caramel is still tacky (within 1-2 minutes of shaping), press in the candy eyes, sprinkles, and chocolate chips to create your spooky faces. Work fast—once the caramel sets, nothing sticks.
  8. Finish with salt. Sprinkle the flaky sea salt over the tops of each popcorn ball.
