Ingredients

Scale
  • 1 cup ripe bananas, mashed (about 23 medium bananas)
  • 3/4 cup canned pumpkin puree (not pie filling)
  • 2 large eggs, room temperature
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1/2 cup unsalted butter, melted and cooled (or coconut oil for dairy-free)
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 3/4 cup walnut halves, toasted
  • 1/4 cup honey

Instructions

  1. Toast the walnuts: Heat a dry skillet over medium heat. Add the walnut halves and stir frequently for 5-7 minutes until fragrant and slightly darker. Remove from heat and let cool.
  2. Preheat the oven to 350ยฐF (175ยฐC). Grease a 9×5-inch loaf pan or line it with parchment paper.
  3. In a large bowl, whisk together mashed bananas, pumpkin puree, eggs, granulated sugar, brown sugar, melted butter, and vanilla extract until smooth.
  4. In a separate bowl, sift or whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
  5. Gradually fold the dry ingredients into the wet ingredients until no streaks of flour remain. Do not overmix.
  6. Reserve 1/4 cup of toasted walnuts for topping. Stir the remaining walnuts into the batter.
  7. Pour half the batter into the loaf pan. Drizzle half the honey over it and swirl gently with a knife.
  8. Add the remaining batter, drizzle with the remaining honey, swirl again, and top with the reserved walnuts.
  9. Bake for 55-65 minutes or until a toothpick inserted in the center comes out clean or with a few moist crumbs. Tent with foil if the top browns too quickly.
  10. Cool the bread in the pan for 15 minutes, then transfer to a wire rack to cool completely.

Notes

Use ripe bananas for natural sweetness and moisture. Toast walnuts yourself for best flavor and crunch. Fold batter gently to avoid toughness. The honey swirl keeps the bread moist and adds subtle sweetness. Start checking doneness at 55 minutes to avoid drying out.
