  • 3/4 cup (150 g) granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 tablespoons fresh lemon zest (from about 2 lemons)
  • 3 tablespoons fresh lemon juice
  • 1/3 cup (80 ml) vegetable oil (neutral oil like canola or sunflower)
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 1/2 cups grated zucchini (about 1 medium zucchini)
  • 2 tablespoons poppy seeds

Instructions

  1. Preheat your oven to 350Β°F (175Β°C). Grease a 9×5 inch loaf pan with oil or butter, or line with parchment paper.
  2. Grate the zucchini and lemon zest using a fine grater or microplane. Gently squeeze out excess moisture from the zucchini if very watery. Set aside.
  3. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and poppy seeds.
  4. Add the lemon zest to the dry ingredients and stir briefly to distribute evenly.
  5. In a separate bowl or measuring jug, combine the vegetable oil, eggs, lemon juice, and vanilla extract. Beat lightly to combine.
  6. Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix.
  7. Fold in the grated zucchini until just incorporated.
  8. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  9. Bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs. Tent with foil after 30 minutes if the top browns too quickly.
  10. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

For best texture, grate zucchini finely and gently squeeze out excess moisture. Do not overmix the batter to avoid toughness. Use fresh lemon zest and juice for bright flavor. If batter is too thick, add up to 2 tablespoons of milk to loosen. Tent with foil if top browns too quickly. Let bread cool completely before slicing for best texture.
