Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line the bottom with parchment paper.
  2. Toast chopped walnuts in a dry skillet over medium heat for 3-5 minutes until fragrant. Let cool.
  3. In a large bowl, mash ripe bananas with a fork until mostly smooth.
  4. Add softened butter and sugar to the bananas. Mix vigorously until light and fluffy.
  5. Beat in eggs one at a time, then mix in vanilla extract and pumpkin puree until combined.
  6. In a separate bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.
  7. Gradually add dry ingredients to wet mixture. Stir until just combined; do not overmix.
  8. Gently fold in toasted walnuts.
  9. Pour batter into prepared pan and smooth the top.
  10. Bake for 55-65 minutes, or until a toothpick inserted in the center comes out clean.
  11. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
