Perfect Halloween Eyeball Caprese Skewers

These creepy yet delicious caprese skewers look like real eyeballs but taste like a classic Italian antipasto. Perfect for Halloween parties, they come together in under 20 minutes with simple ingredients.

Ingredients

  • Fresh Mozzarella Balls (Ciliegine) – 8 oz (about 12-15 balls)
  • Cherry Tomatoes – 12-15
  • Large Black Olives (pitted) – 12-15
  • Fresh Basil Leaves – 12-15 small to medium leaves
  • Toothpicks or Skewers – 12-15
  • Balsamic Glaze (optional) – for drizzling
  • Salt and Pepper – to taste
  • Extra Virgin Olive Oil (optional) – for drizzling

Instructions

  1. Prep the Olives: Drain black olives and pat dry. Slice each olive in half crosswise to create two round halves. Remove any pimento or stuffing. Set aside on a paper towel.
  2. Prep the Mozzarella: Drain mozzarella balls and pat dry individually. Use the roundest ones for best eyeball effect.
  3. Prep the Tomatoes: Wash and dry cherry tomatoes. Remove stems. Let come to room temperature if possible.
  4. Prep the Basil: Pick small to medium basil leaves. Tear large leaves in half lengthwise so each is about the size of a quarter.
  5. Assemble the Skewers: Thread a toothpick with a cherry tomato (bottom), then a basil leaf, then a mozzarella ball. Gently press a black olive half onto the top of the mozzarella, flat side down. Push the toothpick through the olive to secure.
  6. Finishing Touch: Arrange on a platter. Drizzle a tiny amount of balsamic glaze over each ‘eyeball’ for a bloodshot effect. Sprinkle with flaky salt and black pepper.
  7. Serve immediately or refrigerate. If making ahead, assemble without glaze and seasoning, then add just before serving.

Notes

For best results, use room temperature mozzarella so it holds the olive better. Pat all ingredients dry to prevent sliding. If the olive keeps falling off, the mozzarella may be too wet—pat dry again. For a spicier version, add a thin slice of jalapeño between tomato and basil.
