  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey or maple syrup
  • 1/2 teaspoon salt

Instructions

  1. Prepare the Brussels sprouts: Trim the tough ends, remove any yellow or wilted outer leaves, slice each sprout in half lengthwise, then slice thinly crosswise into ribbons about 1/8 inch thick.
  2. Toast the pecans: Heat a dry skillet over medium heat. Add the chopped pecans and cook for 2-3 minutes, stirring frequently, until fragrant and lightly browned. Set aside to cool.
  3. Make the dressing: In a small bowl or jar, combine olive oil, apple cider vinegar, Dijon mustard, honey, salt, and pepper. Whisk until emulsified.

Notes
