  • 3 ripe bananas, mashed (about 1 ½ cups or 340g)
  • ⅓ cup (75g) unsalted butter, melted
  • ¾ cup (150g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 ½ cups (190g) all-purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup (90g) semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your 9×5 loaf pan or line it with parchment paper, leaving some overhang on the long sides for easy removal.
  2. In your large mixing bowl, mash the bananas with a fork until they’re mostly smooth with a few small chunks left.
  3. Pour the melted butter over the mashed bananas and stir until combined.
  4. Add the sugar and stir until well combined. Crack in the egg and add the vanilla extract. Mix until everything is smooth and glossy, about 30 seconds.
  5. Sprinkle the flour, baking soda, and salt over the wet mixture. Stir gently with your spatula or wooden spoon until just combined. A few streaks of flour are okay—overmixing makes tough banana bread. Fold about 10-12 times, max.
  6. Gently fold in the chocolate chips with about 5 more stirs. Reserve a handful to sprinkle on top.
  7. Scrape the batter into your prepared loaf pan and spread it evenly. Sprinkle those reserved chocolate chips on top. Give the pan a gentle tap on the counter to release any air bubbles.
  8. Bake for 50-60 minutes. Place the pan on the middle rack of your oven. Bake until a toothpick inserted in the center comes out clean or with just a few moist crumbs. If the top is browning too quickly (around 40 minutes), tent loosely with foil.
  9. Cool in the pan for 10 minutes. Set the pan on a cooling rack. After 10 minutes, use the parchment paper to lift the bread out and transfer it to the rack to cool completely.

Notes

Don’t overmix the batter. Use overripe bananas (almost black). Check for doneness with a toothpick. Let it cool completely before slicing. Measure flour correctly by spooning and leveling.
