Instructions

  1. Prep your ingredients first: Chop onion, mince garlic, slice kielbasa into ½-inch rounds, and cube potatoes into ½-inch pieces.
  2. Brown the kielbasa: Heat olive oil in a Dutch oven over medium-high heat. Add sliced kielbasa in a single layer and cook without moving for 2-3 minutes until bottoms are browned and crispy. Flip and cook another 2 minutes. Transfer kielbasa to a plate and set aside, leaving browned bits in the pot.
  3. Sauté the aromatics: Reduce heat to medium. Add diced onion to the pot and cook for 2-3 minutes until translucent, scraping up browned bits. Add minced garlic and cook for 30 seconds until fragrant.
  4. Add the potatoes and seasonings: Toss in cubed potatoes, dried thyme, smoked paprika, and black pepper. Stir for about 1 minute to coat.
  5. Pour in the liquid: Add chicken broth, water, and bay leaf. Bring to a boil over high heat (about 3-4 minutes). Reduce heat to medium-low, cover, and simmer for 12-15 minutes until potatoes are tender but still hold their shape.
  6. Finish the soup: Return browned kielbasa to the pot. If using cream, stir it in. For a thicker soup, mix flour with 2 tablespoons cold water to make a slurry and stir into simmering soup. Let heat through for 2-3 minutes. Taste and adjust seasoning. Remove bay leaf before serving.
  7. Serve and garnish: Ladle soup into bowls, sprinkle with fresh parsley and Parmesan cheese. Serve with crusty bread.

Don’t skip browning the kielbasa—it adds smoky depth. Cut potatoes uniformly for even cooking. Use low-sodium broth and wait until the end to add salt, as kielbasa is salty.
