A quick and easy summer drink combining fresh strawberries, lemon juice, simple syrup, vodka, and ice to create a refreshing boozy slushie perfect for hot days.

Ingredients

  • 2 cups fresh strawberries, hulled and halved (frozen works too)
  • 1/2 cup freshly squeezed lemon juice (about 34 lemons)
  • 1/3 cup simple syrup (equal parts sugar and water dissolved)
  • 1/2 cup vodka
  • 2 cups ice cubes
  • 1/2 cup water or sparkling water (optional, for thinning)
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Wash and hull about 2 cups of fresh strawberries. If using frozen, let them thaw for 5 minutes.
  2. Roll lemons on the counter, cut, and juice until you have 1/2 cup fresh lemon juice. Strain if desired.
  3. Make simple syrup by dissolving 1/3 cup sugar in 1/3 cup water over low heat. Cool before using.
  4. Add strawberries, lemon juice, simple syrup, vodka, and ice cubes to a blender.
  5. Blend on high for 1-2 minutes until smooth and slushy. If too thick, add up to 1/2 cup water or sparkling water and blend again.
  6. Taste and adjust sweetness or tartness by adding more syrup or lemon juice if needed, then pulse briefly to mix.
  7. Pour into chilled glasses, garnish with lemon slices and mint sprigs if desired, and serve immediately.

Notes

Use fresh, firm ice cubes for best flavor. If blender struggles with ice, pulse in short bursts. Serve immediately for best texture. For a non-alcoholic version, omit vodka and add sparkling water or lemon-lime soda.
