These easy-to-make non-alcoholic beach cooler drinks capture the laid-back beach vibe with fresh fruits, herbs, and a splash of fizz, perfect for summer fun without the buzz.

Ingredients

  • Citrus fruits (lemons, limes, oranges) – zest and juice
  • Ripe mangoes or pineapples, peeled and chopped
  • Berries (strawberries, blueberries)
  • Fresh mint leaves
  • Basil leaves
  • Rosemary sprigs
  • Honey or agave syrup or simple syrup or stevia
  • Sparkling water or club soda
  • Coconut water or cold brewed herbal tea (hibiscus or chamomile)
  • Fresh ginger slices
  • Cucumber slices
  • Pinch of sea salt

Instructions

  1. Wash all fresh fruits and herbs thoroughly.
  2. Zest and juice the citrus fruits (about 2 tablespoons zest and ½ cup juice per batch).
  3. Peel and chop mango or pineapple into small chunks (about 1 cup).
  4. Place about 10 fresh mint leaves or other herbs into a pitcher.
  5. Gently muddle the herbs using a muddler or wooden spoon to release aroma and oils without tearing.
  6. Add chopped fruits and 2 tablespoons of chosen sweetener to the pitcher and stir gently.
  7. Pour in 3 cups of sparkling water, coconut water, or cold brewed tea and stir lightly to mix.
  8. Fill glasses with ice cubes and pour the cooler over the top.
  9. Garnish with fresh mint sprigs, thin citrus slices, or a few berries.
  10. Taste and adjust sweetness or citrus juice as desired.
  11. Optional: Strain the mixture through a fine mesh sieve for a smoother drink.

Notes

Use fresh herbs and ripe fruits for best flavor. Muddle herbs gently to avoid bitterness. Chill sparkling water and fruits before mixing to keep drinks cold without diluting. Add ice just before serving to maintain flavor intensity. Frozen berries can be used to chill drinks and add color. Variations include adding ginger juice, jalapeño slices, or blending with ice for a frozen cooler. Store leftover base (without ice) refrigerated up to 2 days. Add sparkling water and ice just before serving.
