  • ¾ cup warm whole milk (180 ml, about 110°F/43°C)
  • ¼ cup granulated sugar (50 g)
  • ⅓ cup unsalted butter, melted (75 g)

  • 2 large eggs, room temperature
  • 3 ½ cups all-purpose flour (440 g), plus extra for dusting
  • 8 slices thick-cut bacon, cooked and chopped
  • ½ cup brown sugar, packed (100 g)
  • 2 tablespoons ground cinnamon
  • 3 tablespoons pure maple syrup
  • 2 tablespoons unsalted butter, softened
  • 1 cup powdered sugar (120 g)
  • 2 tablespoons pure maple syrup (for glaze)
  • 2 tablespoons whole milk (or almond milk for dairy-free)
  • ¼ teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Activate the yeast by combining warm milk and 1 teaspoon sugar in a large bowl. Sprinkle yeast over the top and let sit for 5–10 minutes until foamy.
  2. Make the dough by stirring in melted butter, remaining sugar, salt, and eggs. Gradually add flour and mix until a shaggy dough forms. Knead for 6–8 minutes with a stand mixer or 10 minutes by hand until smooth and elastic.
  3. Place dough in a lightly oiled bowl, cover, and let rise in a warm spot for about 1 hour or until doubled in size.
  4. Cook bacon until crispy, drain, and chop. Mix brown sugar, cinnamon, softened butter, and maple syrup into a spreadable paste for the filling.
  5. Punch down the risen dough and roll into a 15×10 inch rectangle on a floured surface. Spread filling evenly, leaving a small border, then sprinkle chopped bacon on top.
  6. Roll dough tightly from the long edge into a log. Pinch seam to seal and cut into 12 equal slices. Place rolls cut-side up in a greased 9×13 inch pan.
  7. Cover loosely and let rolls rise for 30–45 minutes until puffy. Preheat oven to 350°F (175°C).
  8. Bake rolls for 25–30 minutes until golden brown and cooked through. Tent with foil if tops brown too fast.
  9. While baking, whisk powdered sugar, maple syrup, milk, vanilla extract, and salt to make the sticky glaze. Adjust thickness with milk if needed.
  10. Remove rolls from oven and immediately brush generously with glaze. Let cool for 5 minutes before serving.

Notes

Use unflavored dental floss to cut rolls cleanly. Let dough rest 10 minutes if tough to roll. For gluten-free, use almond flour and add an extra egg. Bacon can be substituted with turkey bacon or candied pecans for variations. Glaze while rolls are warm for best absorption.
