  • Juice of 1 lime
  • 1 ripe mango, peeled and julienned or diced
  • 2 cups green cabbage, thinly sliced
  • 1/2 red bell pepper, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 1 small jalapeño, seeded and minced (optional)
  • 2 tablespoons fresh lime juice
  • 1 tablespoon honey or agave syrup
  • Salt to taste
  • 8 small corn tortillas
  • 1/4 cup crumbled cotija cheese or feta (optional)
  • Extra lime wedges for serving

Instructions

  1. In a small bowl, combine smoked paprika, ground cumin, garlic powder, cayenne pepper (if using), salt, and pepper. Add olive oil and lime juice, stirring to form a marinade. Toss the shrimp in the marinade until evenly coated. Cover and refrigerate for 15-20 minutes.
  2. While the shrimp marinates, slice the cabbage, bell pepper, and mango. In a medium bowl, combine these with chopped cilantro and minced jalapeño if desired. In a small bowl, whisk together lime juice, honey, and a pinch of salt. Pour the dressing over the slaw and toss gently to combine. Set aside.
  3. Preheat your grill or grill pan over medium-high heat for about 5 minutes.
  4. Place the shrimp on the grill in a single layer. Cook for about 2-3 minutes per side until pink and opaque with grill marks. Remove from heat and set aside.
  5. Warm the corn tortillas on the grill for about 20 seconds per side until soft and pliable. Wrap in a clean kitchen towel to keep warm.
  6. Assemble the tacos by dividing the grilled shrimp evenly among the tortillas. Top with mango slaw and sprinkle with crumbled cotija or feta if using. Serve with lime wedges.
  7. Serve immediately while fresh and vibrant.
