Instructions

  1. Preheat oven to 425°F (220°C).
  2. Wash green tomatoes and cut into quarters. Cut onion into quarters and peel garlic cloves.
  3. Place tomato quarters, onion quarters, garlic cloves, and whole jalapeños on a rimmed baking sheet. Drizzle with olive oil and sprinkle with a pinch of salt. Toss to coat evenly and spread in a single layer.
  4. Roast for 20-25 minutes, flipping halfway through, until tomatoes are soft with dark brown or black spots, onions are translucent at edges, garlic is golden and soft, and jalapeños are wrinkled and blistered. If needed, broil for 2-3 minutes for extra char.
  5. Let cool for about 5 minutes. Remove stems from jalapeños. For milder salsa, remove seeds and membranes; for more heat, leave them whole.
