Instructions

  1. Preheat oven to 350ยฐF (175ยฐC) and line two large baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and cream of tartar. Set aside.
  3. In a large bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).
  4. Beat in the egg and pumpkin puree until fully combined and smooth.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed or stirring with a spatula until just combined. Do not overmix.
  6. Scoop out about 1.5 tablespoons of dough per cookie and roll into balls.
  7. Mix cinnamon and sugar in a small shallow bowl. Roll each dough ball in the mixture until fully coated.
  8. Place cookies on prepared baking sheets, leaving 2 inches between them for spreading.
  9. Bake for 10-12 minutes. The edges should be set, but centers should look slightly soft.
