spooky creamy buffalo chicken dip - featured image

A quick, creamy, and spicy buffalo chicken dip that comes together in under 10 minutes. Perfect for Halloween parties or last-minute gatherings, this recipe uses a blender for a smooth, luxurious texture.

Ingredients

Scale
  • 8 ounces cream cheese, softened
  • 1/2 cup ranch dressing
  • 1/2 cup buffalo sauce
  • 2 cups shredded rotisserie chicken
  • 1 cup shredded cheddar cheese
  • 1/2 teaspoon garlic powder
  • Green onions or extra ranch dressing for garnish (optional)

Instructions

  1. Cut the cream cheese into cubes and microwave in a microwave-safe bowl for 15-20 seconds until soft but not melted.
  2. Add the ranch dressing, buffalo sauce, and garlic powder to the bowl with the cream cheese.
  3. Blend the mixture on medium-high speed until completely smooth and creamy, scraping down the sides as needed.
  4. Add the shredded chicken and half of the shredded cheddar cheese to the blender. Pulse briefly just to combine, ensuring the chicken remains in distinct pieces.
  5. Transfer the mixture to a serving bowl and smooth the top.
  6. Sprinkle the remaining cheddar cheese on top.
  7. Serve immediately at room temperature, chill for 15-20 minutes for a firmer dip, or microwave for 30-45 seconds to serve warm.

Notes

Ensure cream cheese is softened to avoid lumps. Adjust spice level by reducing buffalo sauce. Do not freeze as dairy may separate. Best served at room temperature or slightly warm.
