  • 1/2 cup finely diced red onion (about 1 small onion)
  • 12 jalapeños, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • 23 tablespoons fresh lime juice (about 1 1/2 limes)
  • 1 teaspoon kosher salt (adjust to taste)
  • 1/4 teaspoon cumin
  • 1 medium tomato, diced and seeds removed (optional)
  • 1 bag black tortilla chips
  • Optional: lime zest and flaky salt for garnish

Instructions

  1. Make the bat chips first: Open the bag of black tortilla chips and spread them out on a baking sheet. Press the bat cookie cutter firmly through each chip. You should get about 20-25 bat chips from one standard bag. Set aside; they don’t need baking.
  2. Prep your aromatics: Dice the red onion finely. If you want a milder onion flavor, soak the diced onion in cold water for 5 minutes, then drain and pat dry. Mince the jalapeño, removing the seeds and white ribs if you want less heat. Chop the cilantro, stems and all. Dice the tomato, scooping out the seeds before chopping. Set everything in small bowls.
  3. Cut and mash the avocados: Slice each avocado in half lengthwise, twist to separate, and remove the pit. Score the flesh in a crosshatch pattern, then scoop it out into a mixing bowl. Add the lime juice and salt immediately. Mash with a fork to your desired consistency, leaving some chunks about the size of a pea for texture.
  4. Add the mix-ins: Fold in the diced onion, jalapeño, cilantro, tomato (if using), and cumin. Stir gently until just combined. Taste and adjust salt or lime juice. Let it sit for 10 minutes before serving to let the flavors meld.
  5. Assemble and serve: Transfer the guacamole to a serving bowl. Arrange the bat chips around the edge, sticking them into the guacamole at different angles. Sprinkle lime zest and flaky salt over the top. Serve immediately.

Notes

For best results, use ripe Hass avocados that yield to gentle pressure. The guacamole tastes better after sitting for 10-15 minutes. To prevent browning, press plastic wrap directly onto the surface before refrigerating. Bat chips can be cut up to 24 hours ahead and stored in an airtight container at room temperature.
