A happy accident turned into a Halloween tradition—creamy deviled eggs with a sweet candy corn twist. Perfect for parties, these festive bites are quick, easy, and irresistibly delicious.

  • 1/4 cup mayonnaise (recommended: Duke’s)
  • 1 tablespoon yellow mustard
  • 1 teaspoon white vinegar
  • 1/4 teaspoon salt

  • 1/3 cup candy corn, finely crushed (plus extra for garnish)
  • 1 tablespoon unsalted butter, melted
  • Yellow food coloring (optional)
  • Orange food coloring (optional)
  • White piping gel or extra crushed candy corn for the top (optional)

Instructions

  1. Boil the eggs: Place eggs in a single layer in a medium saucepan. Cover with cold water by about an inch. Bring to a rolling boil over high heat, then cover, turn off heat, and let sit for 12 minutes.
  2. Ice bath: While eggs cook, fill a bowl with ice water. Transfer eggs to ice bath using a slotted spoon. Let chill for at least 5 minutes.
  3. Peel and halve: Tap each egg to crack shell, roll between palms to loosen, and peel under running cold water. Cut each egg in half lengthwise. Pop yolks into a mixing bowl and arrange whites on a serving platter.
  4. Crush candy corn: Pulse 1/3 cup candy corn in a small food processor until fine powder (like sand). Set aside 1 tablespoon for garnish.
  5. Make filling: Mash yolks with a fork until crumbly. Add mayonnaise, mustard, vinegar, salt, pepper, and crushed candy corn (minus reserved tablespoon). Mix until smooth and creamy. Stir in melted butter.
  6. Color filling (optional): Divide filling into three bowls. Leave one white/pale yellow, tint one with yellow food coloring, and one with orange food coloring.
  7. Pipe stripes: Spoon each colored filling into separate piping bags (or layer in one bag). Pipe into egg white halves in three stripes: orange at bottom, yellow in middle, white on top.
  8. Garnish and serve: Sprinkle reserved crushed candy corn on top. Serve immediately or refrigerate up to 2 hours before serving.

Notes

For perfect hard-boiled eggs, use the boil-cover-turn-off method to avoid green rings. Crush candy corn in short pulses to prevent clumping; if sticky, chill briefly. Make filling up to 24 hours ahead and store in piping bag in fridge. Egg whites can be boiled and peeled up to 3 days ahead. Serve chilled or at room temperature; do not freeze.
