  • 1 cup (240g) pumpkin puree
  • 1 cup (240ml) milk (dairy or plant-based)
  • 1/3 cup (80ml) pure maple syrup
  • 2 large eggs, at room temperature
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 tablespoons melted coconut oil or butter
  • Optional mix-ins: 1/2 cup chopped pecans or walnuts, 1/4 cup dark chocolate chips, or 1/4 cup dried cranberries

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease each cup with melted coconut oil or butter.
  2. In a medium bowl, whisk together rolled oats, pumpkin pie spice, baking powder, and salt.
  3. In a large bowl, whisk together pumpkin puree, milk, maple syrup, eggs, vanilla extract, and melted coconut oil or butter until smooth.
  4. Pour dry ingredients into wet ingredients and stir with a spatula until just combined. Fold in optional mix-ins if using.
  5. Let the batter rest for 5 minutes to allow oats to absorb liquid.
  6. Divide batter evenly among the 12 muffin cups, filling each almost to the top.
  7. Bake for 20-25 minutes, until tops are set and lightly golden, and a toothpick inserted into the center comes out mostly clean with a few moist crumbs.
  8. Let the muffin tin cool on a wire rack for 10 minutes, then remove oatmeal cups and cool completely on the rack.
