Ingredients

Scale
  • 1 can (15 oz) refried black beans (Rosarita brand preferred)
  • 8 oz cream cheese, softened
  • 1/2 cup sour cream (full fat preferred)
  • 1 packet taco seasoning (McCormick mild variety recommended)
  • 1 cup shredded Mexican blend cheese, divided (3/4 cup for dip, 1/4 cup for bandages)
  • 1 can (2.25 oz) sliced black olives
  • 1/4 cup shredded mozzarella cheese
  • Optional: 1 small carrot, cut into thin strips
  • Tortilla chips (restaurant-style for serving)
  • Fresh cilantro for garnish (optional)
  • Hot sauce on the side (optional)

Instructions

  1. Preheat oven to 350ยฐF (175ยฐC). Let cream cheese sit at room temperature to soften.
  2. In a large mixing bowl, combine softened cream cheese, sour cream, and taco seasoning. Beat with a hand mixer on medium speed until smooth and creamy, about 2 minutes. Scrape down sides of bowl halfway through.
  3. Add refried black beans to the bowl. Mix on low speed until fully incorporated. Do not overmix; texture should be thick but spreadable.
  4. Fold in 3/4 cup shredded Mexican blend cheese using a spatula until evenly distributed.
  5. Transfer dip to a serving dish (round dish preferred). Spread into an even layer, slightly mounded in the center.
  6. Bake for 10 minutes until cheese is melted and edges are bubbly.
  7. Remove from oven and let cool for 2 minutes before decorating.
  8. Place two sliced black olives in the upper third of the dip for eyes, spaced about 2 inches apart.
  9. Use remaining 1/4 cup Mexican blend cheese and mozzarella to create horizontal strips across the dip like mummy bandages, leaving eyes exposed. Strips can be slightly crooked for authenticity.
  10. Optional: Add thin carrot strips as extra bandage details or a small dollop of sour cream for a loose bandage look.
  11. Serve immediately with tortilla chips.

Notes

Do not skip softening the cream cheese to avoid lumps. Let dip cool for 2 minutes before decorating to prevent cheese from sliding off. For a make-ahead option, assemble without baking up to 24 hours in advance, refrigerate, then bake before serving. Add mummy decorations after baking. Not recommended for freezing.
