Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan or line with parchment paper.
  2. Peel ripe bananas and place them in a large mixing bowl. Mash with a fork or potato masher until mostly smooth but with some chunks.
  3. Add melted butter (or oil), sugar, egg, and vanilla extract to the bowl. Whisk until well combined.
  4. Sprinkle flour, baking soda, and salt over the wet mixture. Gently fold with a spatula until just combined; do not overmix.
  5. Pour batter into the prepared loaf pan and smooth the top.
  6. Bake for 50-60 minutes. Do not open the oven door for the first 40 minutes. Check doneness with a toothpick (should come out clean).
