Instructions

  1. Combine the dry ingredients: In a large mixing bowl, add 1 cup rolled oats, 2 tablespoons ground flaxseed (if using), and a pinch of salt. Stir to distribute evenly.
  2. Add the wet ingredients: Spoon in ½ cup creamy peanut butter, ¼ cup honey, and 1 teaspoon vanilla extract. Spread them around for easier mixing.
  3. Mix until combined: Stir with a rubber spatula or wooden spoon using a folding motion until the mixture holds together when squeezed. If too dry, add another tablespoon of honey; if too sticky, add a tablespoon of oats.
  4. Fold in the chocolate chips: Add ⅓ cup mini chocolate chips and fold gently until evenly distributed.
